Recipe-a-Day #18 - Peppers and Eggs Sandwiches

3 tbls olive oil
1 red and 1 green bell pepper cut into 1 inch pieces
8 eggs
1 long loaf of Italian bread

Heat oil over medium heat in large nonstick skillet
Add peppers and cook for 15 minutes or until brown
Cover and cook for 5 more minutes
Beat eggs and pour over peppers
Turn peppers and eggs to allow eggs to reach bottom of pan
Repeat until eggs are fully cooked
Cut a lengthwise slit in the bread and pull out the soft crumb from the center
Fill bread with peppers and eggs

Cut the loaf into 4 sandwiches and enjoy!

Any thoughts as to weather or not an orange or yellow bell pepper would be a sufficient substitute for a green bell? I can't stand green pepper...but I can tolerate the yellow, orange & red (sorta). I think just for aesthetics the orange would look better....just curious.

I think you’d be safe. For some reason, most of the recipes that I see call for green & red peppers. I’m not sure why, maybe they are just more common.

More common, less expensive (by far), and generally speaking, when creating a recipe, you want varying colors so that it looks pleasing as well. (Same reason why you won't find a restaurant that serves corn with mac & cheese--if that were really an item on an adult menu--too much yellow. You have to have contrast).
