Stone Cold
I am curious fellas.
What exactly do you consider a "Smash" Burger??
.
I been looking at these burger joints and such and what they are calling a smash burger is a patty that has been mushed down into oblivion until its only about 3mm thick.
to whit...a burger that has been thoroughly "smashed"
.
however, all my life...including extensive time as a recognized Grill Master...a smash burger has been really thick...a really fat burger that needed to be smashed to thin it out a bit...which was a bummer because it usually resulted in a pretty serious loss of moisture in the burger. ie "Juice"... but you smashed it so it would cook because currently the edges were done but the inch thick center portion was still bloody.
now granted, my grill master time was primarily focused on Chicken breast, ribs, briskett, and fat ass ribeyes...burgers and dogs were kinda beneath me...but I still grilled them up once in a while...if someone brought kids...or extra adds to their +1...
.
what is your position?? Is a smash burger a patty that has to be smashed because it is too thick to cook evenly??
Or is it a bedraggled thin as paper slice of ground beef lunch meat??
