1 1/2 lbs boneless, skinless chicken breasts
3 tomatoes
can of chipotles in adoba sauce
tsp kosher salt
tsp cumin
tsp black pepper
tsp garlic powder
1/2 cup of chicken broth
tbsp lemon juice
diced yellow onion
I crockpot the chicken in broth.
When I get home from work I puree the tomatoes with the spicesm the lemon juice, the liquid from the chipotles, 2 chipotles, and a 1/2 cup of the broth from the crockpot. And simmer the sauce in a pan with sauteed onions.
When it has simmered for about 10 minutes I throw in the chicken which I shred while the sauce simmers.
I server with flour tortillas, lettuce, and tomatoes.
