Tony Jefferson was the last UDFA that I can recall.

I was wrong about Jerome. He's listed by nfl.com as undrafted.

Ran a cruddy 40 but had an insane Sr. Bowl.

Bottom Line
Knight is a tough guy and a very capable runner, but he's never thrown with any functional accuracy and he doesn't have the anticipation and delivery quickness necessary. Knight is a longshot to make an NFL roster.
BARF!

We need a 4th camp arm. We have our 2 QBs, the only question is whether we will also keep Dysert. It turns out, this was not the year for a new QB.

Antonio Pipkin - QB Tiffin - Broke every Div. II record this year. CBSSportsLine called him "a D1 talent playing at a Div II school"
Ryan Lewis - CB Pittsburg - Led the nation in PI penalties!
Krishawn Hogan - WR, Marion - Led NAIA in receiving. NFL.com predicted he'd be a 4th rounder
Carlton Agudosi - WR Rutgers - Cards worked him out twice before draft.
Collin Bevins - DT NWMoSt. - 6'8" 300lbs!
Seth Coates - WR St. F. - Team won NAIA Champ led team in every category
Lucas Crowley - C North Carolina - played every game for 4 years at 269lbs!
Ryan Watson, LB AF - Led Mt.West in sacks as a 249lb DE!

I've seen conflicting reports on Bevins' size. I've read that he measured in at 6'4" 274 lbs. at his pro day.
