For one cornish game hen -- about 1/3 to 1/2 cup unsweetened pomegranite concentrate -- I used the Brownswood Farm straight, or you could reduce 1 cup of POM to about 1/2 cup and it would be thick enough. A splash of Worcestershire, a splash of soy sauce, one small garlic clove crushed or coarsely chopped, a good shake of Penzey's Shallot-pepper-herb blend (That stuff is great - ever been to the Penzey's store? Nice.), a splash of either Balsamic vinegar or strong red wine, and about a TBSP or so of orange marmelade -- I use one that's not super sweet. Then several cranks of good black pepper. Mix, let sit for 15 min or so. It's got a tangy, peppery, sweet-sour-citrus thing going.
Brush about 1/3 of the mixture on underside and skin of a split hen, bake skin side down at 375 covered about 30 min (OR- microwave for about 6-8 minutes), rebrush with 1/3 sauce, flip bird and bake about 15-20 min, then finish about 10-15 min at about 400, skin side up, uncovered, drizzled with last of the glaze. The pan juices are incredible over brown rice -- I was licking the baking pan after it cooled. I bet it would be good on ribs with a little cayenne added.

Did you try that port wine and pomegranate glaze I told you about? Its friggin delicious! In fact, heres the recipe. I did it with the sumac spiced skirt steak and it was awesome, but I remade it and used it over a roasted chicken and it worked well there too.
