Gross! Dinty moore with tuna. Ugh.

It sounds fancy like, but we just go to a fish store that doesn't really cost so much.

It is a recipe from my inlaws that came over on a boat from Italy.

i was cooking up some pulled pork and brisket this weekend for future use and decided to try this for dinner last night from my smoke & spice cookbook

took a couple boneless, skinless chicken breasts and applied a rub

the rub consists of black pepper, paprika, turbinado sugar, kosher salt, dry mustard and cayenne

then i made the alabama great white sauce consisting of mayo, apple cider vinegar, pepper, kosher salt, onion powder & cayenne

i let my wife pick the woods so I armed myself with sugar maple and white oak

after letting the rub settle in for about a half hour I diluted the sauce with some water to make a mop - hit it before throwing it on the smoker where it sat for 40 minutes ...... not getting up to eating temps fast enough I transfered to the gas grill and hit it with the mop again

when the chicken was done I toasted some white bread - threw some lettuce on there, coated one side with the white sauce and threw a nice hit of relish on the sandwich

fan-freaking-tastic

tonight i'm back to boring grilled tilapia with rice and veg
