Earl Grey tea is any tea blend with a distinctive flavour and aroma derived from the addition of oil extracted from the rind of the bergamot orange, a fragrant citrus fruit. Traditionally the term "earl grey" was applied only to black tea; however, today the term is also applied to both green and white teas that contain oil of bergamot.
I made an earl grey ice cream awhile ago. Im not a big tea drinker, but damn that ice cream was GOOD. I didnt have a recipe, I made it up. Here's what I did:
16oz whole milk
16oz heavy cream
(aside: Ive made IC bases using a qt of half and half, and have had similar results, but I use organic milk and cream, and havent found an organic half and half)
4 bags earl grey tea
1 vanilla bean, sliced open and scraped
6 egg yolks
1/2c sugar
Bring the milk and cream and vanilla bean, plus the scrapings from in side the bean to a boil, and then immediately kill heat. drop in tea bags and infuse off the heat for 20 mins.
Meanwhile, whisk together the yolks and the sugar until pale yellow and glossy.
After steeping, remove tea bags (If they happen to break oepn, whatever, we're straining again later) and temper the yolk mixture by pouring half the cream mixture into yolk and stir together. Return yolk mixture back with reast of cream, and cook over low heat, stirring constantly til mixture reaches 180 degrees (when you see the first bubble, thats about 180) and custard coats the back of a spoon.
Remove from heat, strain the custard through a fine mesh sieve and coolin an ice bath, stirring regularly, until well cooled.
Place into your ice cream mixture and spin according to manufactureres specs.
I love making ice cream. Its a very zen like process for me. Anyone else experiment with it?
