Recipe-a-Day #24 Penne and Feta
1 Bushell of Asparagus
1 Green Bell Pepper
1 Yellow Bell Pepper
1 Bottle of high quality Balsamic Vinegarette dressing (don't get cheap crap, trust me it will break the dish)
1 package of Tomato and Herbs Fetta Cheese
1 package of Penne noodles
1 LB of chicken breast (OPTIONAL)
Pre-heat oven to 400 degrees
Slice up your Asparagus, Bell peppers and zucccinni into 1 inch bite sized pieces, arrange on a baking pan, salt and pepper to taste. Lightly coat the bunch with some of the Balsamic Vinegarette dressing and place into the oven and cook until al dente.... don't let it get mushy.
Cook your Penne pasta until al dente and place in large salad bowl. At this point you can also add the cooked chicken to this recipe but it is not required. I like it in small pieces.
Once your veggies have cooked let them cool a bit and add into the noodles. Add a good portion of the remaining dressing until everything is coated. Then before serving add the Fetta cheese.
Serve with garlic bread.
