Recipe-a-Day #15 - Roasted Sausages, Peppers, Potatoes, and Onions
For four people:
1 pound of potatoes, peeled and cut into 1-inch chunks
1 green and 1 red bell pepper, cut into 1-inch pieces
1 medium onion, cut into 1 inch chunks
¼ cup olive oil
1 pound of sausages
Preheat oven to 450. Spread out the veggies in a large roasting pan. Drizzle with oil and sprinkle with salt and pepper. Stir them up and roast for 45 minutes, stirring once or twice.
Pierce each sausage in two or three places with a fork. Place the sausages on top of the veggies and bake for 15-30 minutes.
This is a pretty easy item that doesn’t require much prep. Cutting the veggies only takes a few minutes, then you just need to remember not to overcook them. I actually cook them a little less than the recipe says.
