Recipe-a-Day #11 - Chocolate Peanutbutter NO BAKE cookies


This is one of my hubby's all time favorites!!! I especially love this recipes here in Phoenix because it means in the middle of July, my kids can make cookies without turning on the oven and heating up the entire house!!!!!!!

Chocolate Peanut Butter No Bake Cookies


2 cups granulated sugar
8Tb (1 stick) butter or margarine
½ cup low fat milk
1/3 cup Baking Cocoa
1 Tb Vanilla
½ cup peanut butter
3-4 cups oats (quick or old fashioned)

In a large saucepan, combine sugar, butter, milk and cocoa.
Bring to boil over medium heat, stirring frequently. Continue to boil for 3 minutes stirring frequently.

Remove from heat and stir in vanilla and peanut butter, then add oats. (Let mixture cool for 5 minutes first if using old fashioned oats)

Drop by tablespoons onto waxed paper (or cookie sheet.) Let stand until firm. Store tightly covered.

One summer like ten years ago my cousin came out to work for my dad. My mom made some of these cookies. He was about to reach for one when my sister told him not to eat too many or he would get diarrhea. He quickly pulled his hand back. Since then I have referred to these as Diarrhea cookies. I think you have to eat 8-10 to get diarrhea.
