And on topic, I don't think I'd ever cure my own bacon, unless that is code for something...

I would. but then, Im a bit of a freak.
And Mulli, I have a buddy brett (two t's) that i met in a kitchen in Denver a couple years ago who regularly rocks animal (specifically howling wolves) t shirts. He got me one, and I justnnever appreciated the greatness of it until I saw Bret rock it.

Thanks! I'll be giving that a try.
We bought a 1/2 hog from our neighbors and I told the butcher not to cure the bacon or ham (my son has celiacs). I received the hog back, and sure enough, the bacon wasn't cured, but was SLICED! so much for curing my own with this stuff..

Yesterday, I had bacon that was slightly chewy. I just fried some myself and it is pretty crispy with chewy bits of fats.
I like bacon either way.
Has this been resolved yet?

dcr & I tried baking it in the oven on a broiler pan (per the instructions on the package). Wasn't too bad. Could have stood to have stayed in a bit longer to make it crispier. I liked that it all got done at once...no frying making a mess everywhere, no having to keep a close eye on it, turning, etc. Next time I'll start them earlier, so it finishes at the same time as everything else.

The next argument can be whether or not you like it to curl up, or stay flat.Either way, at least we all agree it should be chewy.
