My new favorite food. If they are on the menu I'm ordering it. Especially good for breakfast when made with eggs. The great thing is, no two restaurants seem to serve them the same way. Anyone else into these?

The spelling is Chilaquiles...just in case you want to look up a recipe.

They are basically enchiladas made with leftover tortillas. Usually the tortillas are fried and then drenched in sauce and cheese and topped with a variety of toppings.

I love Chilaquiles for breakfast or dinner.

Here is a really easy version:

Boil 8 tomatillos and 4-6 (depending on how hot you want it) jalapenos for about ten minutes.

Add the tomatillos, jalapenos, half an onion, 3-4 cloves of garlic, cilantro and some chicken stock in a blender and blend until smooth.

Fry corn tortillas and then break into pieces in a casserole dish. (Or in a pinch use some good quality tortilla chips)

I often add shredded chicken. (Poach a whole chicken...use the meat and make broth at the same time).


Poor sauce over and cover with grated cheese (I use Menonita)

Broil until the cheese bubbles and starts to brown.

Top with sliced red onion rings, cilantro, and crema. Add an egg if you are having it for breakfast.
