I'll be making the Best BBQ on saturday during the draft. Stellas and smoking on draft day-- making a brisket with smoked hot dogs to keep me going while it cooks.

i threw on tenderloin for the first time for a christmas cook
was a little nervous as I was cooking for the inlaws and bought the untrimmed pack from costco (about $80 worth of meat)
trimmed it and tied it
then I used TVWB (great website) recipe of salt, oil and pepper
smoked it at about 230-235 on the grate for around an hour - got the meat anywhere from 127-140 degrees
seared to finish over direct coals
used 2 small pieces of alder and 1 small piece of cherry
turned out fan-freaking-tastic ...... just enough smoke to really set in, no knife was necessary when eating and the meat has a decent amount of flavor for tenderloin
one mod I would do in the future is to rub with butter and re-apply salt and pepper before the final seer

- Sear the meat at first then move to cooler smoke side for slow smoke
- Keep your chips in an empty can (small paint can ideal) filled with beer for at least a day. Don't know why but this definitely helps the smoke and the embers seem to savor more
- If you only have a smoker and not a full grill, nothing wrong with searing the meat in a pan before grilling
- Gas grills tend to get too hot and cook meat too fast
