Beans Beans the musical fruit


Pot on the stove right now. I love beans!

1 bag GOYA dried black beans
1 ham hock
1/2 lg onion, diced
2 jalapenos seeded, diced
3 cloves garlic, sliced crosswise thinly
Water
Salt

Soak beans overn ight in cold water, or if you plan poorly like I do, quick soak them. Cover with water in a large pot, bring to a boil, cover remove from heat, allow to sit 1 hour, then drain.

take yer ham hock, brown it in a large pot in some oil until it smells smoky and delicious and is browned nicely. Add your veg a pinch of salt and saute until just beginning to soften, no color. Addd the beans, cover with water by 1 inch, and season well. Bring all to a boil, lower to barely a simmer, cover and cook slow and low until beans are tender. Check seasoning and water level along the way.

Mash some of the beans and then readd if you lik your liquid thicker, remove liquid entirely, or serve as is. Whatever.

Why is it an unwritten rule you must soak dry beans prior to cooking? I used to do that, but now I simply clean them with a good rinsing, add water and other ingredients, and cook.

I can't tell the difference

Its perfectly acceptable. However, I personally find that although you can cook them from dry, they tend to not have a moist plumpness when they are done but rather a dryer tenderness. its preference.

I thought beans were legumes, not fruit

I do like the spanish-style beans; Goya makes a ham-flavored seasoning packet so you don't need to buy ham hocks!

But if you do that, you dont get to pick all the smoketastic fatty meat from the bone after you remove it from your beans!
