Official Salsa Recipe thread


Okay, I have gotten quite a few requests, even from 2 people who have never tasted the salsa

This is completely my own recipe and I have tweeked it so many times over the past 10 years or so with things i have found that worked well. I wanted to be a cook at one time but oh well.

So I have 2 main variations that I make and you can decide how much effort you want to put in. I also grow my own stuff, I'm not sure how much different it tastes

Shopping list:
4 of the big cans of whole peeled tomatoes (don't use stewed or any other variation)
1 small white onion
2 cans of diced green chilies
2 bushells of green onions (I like the Macayo's brand)
1 stock of Cilantro
4-6 jalapenos (to taste, cerano chilies also work, don't use Habanero) The smaller the jalapeno, the hotter (FYI)
celery salt
Garlic Powder
table salt

This is exactly how i made it at poker night:

Get a huge bowl and food processor.
Slice up the Jalapenos and white onion cut the bottom stems off the cilantro and put it in the food processor with one can of tomatoes. (the tomatoes help it chop up smoother) Let it run until everything is chopped finely. After its done put it into a large bowl

Slice up the green onions closely, avoid using the white parts, they can be bitter. Throw those into the bowl

Open your cans of green chilies and throw those bad boys in there

Open the remaining cans of tomatoes and processess them all up but it in the mixing bowl. I like my tomatoes UNchuncky (like I like my women) so I process them up pretty good, but you can make it any way you please

Everything is in there so start mixing it up. Now we go to the seasoning part. This is where people go wrong, they start throwing all this stuff in there, but the ingredients is what gives it flavor. Use the celery salt to spice it up, but do not use it like it is salt..... I would say maybe 2 tablespoons would suffice. Now add a good amount of the garlic powder to taste. Then salt to taste....thats it!!

Let me know how it goes, if you want I will tell you how to make it completely fresh, everything from scratch with fresh ingredients grown from your garden or bought, not from cans..... Takes a lot of effort but it gives a little different taste

Ahh - that explains it. My past failures have been from an idiot friend who suggested using stewed tomatos.

I go thru salsa like a madman - buy the 70 oz'ers from Safeway, but yours is much better. I'll give it a shot this week and let you know how it goes.

Thanks for posting this! My hubby is a salsa freak and he's getting sick of the bottled stuff that we've got around here! I'll have to give this a try! Thanks again!

I plan on running out and getting all the ingredients for this tonight...one thing though: Don't have a food processor...any ideas on what I could do instead?
